主講《食品毒理學》、《微生物學》、《微生物學實驗》和《分子營養(yǎng)學》等本科生和研究生課程,參編江蘇省高等學校重點教材2部,參與建設江蘇省一流本科課程1門。主持校級教改課題1項,發(fā)表教改論文3篇,指導國家級大學生創(chuàng)新訓練項目5項,省級一般項目1項。
研究領域及方向:
分子營養(yǎng)與功能性食品。重點圍繞食品中功能因子改善二型糖尿病和肥胖的作用及機制研究。
