教學(xué)工作:
擔(dān)任了《生物化學(xué)》、《生化實(shí)驗(yàn)》和《食品營(yíng)養(yǎng)學(xué)》等專業(yè)課程的教學(xué),并獲得校級(jí)優(yōu)秀教學(xué)三等獎(jiǎng);主持校級(jí)教改課題1項(xiàng),并發(fā)表教改論文1篇;
參與建設(shè)《食品營(yíng)養(yǎng)學(xué)》國(guó)家級(jí)一流本科課程,以及《健康食品制造》產(chǎn)教融合省級(jí)一流課程,《食品營(yíng)養(yǎng)學(xué)》和《生物化學(xué)》省級(jí)在線課程。
研究領(lǐng)域及方向:
(1)膳食因子、腸道菌群及營(yíng)養(yǎng)健康:通過不同的動(dòng)物模型,建立腸道菌群與疾病之間的聯(lián)系,挖掘食品功能因子發(fā)揮作用的潛在機(jī)制。
(2)糧食副產(chǎn)物精深加工與高效轉(zhuǎn)化:通過創(chuàng)新生物法、酶法、合成生物學(xué)等多種技術(shù)手段,提取糧食副產(chǎn)物中多糖、蛋白、多酚和γ-谷維素等營(yíng)養(yǎng)成分,并應(yīng)用于保健品、化妝品和功能食品等中,促進(jìn)糧食副產(chǎn)物的高值利用。
